I bought this knife a little over two months ago. Since then, I've been using it daily, cutting all kinds of meat, such as beef, chicken, salmon, etc. It goes thru even tough meat like beef tendon, fascia, and chicken gizzard in one graceful gliding stroke. Cutting meat with this knife is such a pleasant experience that after I am done cutting what I need for dinner, I'd go through my refrigerator looking for meat to cut, just to experience that wonderful sensation again and again.
