This is a fantastic bonning knife. I find I prefer the maru style for chicken and cleaning lamb racks type of work. And the Kaku type for larger meats like pork and beef.
I've used and bought many knives over the years. I'm most impressed with the Minamoto Masamori brand I have a few of them now. In terms of value,price and performance, fit and finish really exceptional. I wish there was easily more models available from Minamoto Masamori. They do need a good edge sharpening out of the box ,they leave that almost completely to the buyer which is great IMO. Best bang for buck and all around performance with Minamoto Masamori, great steel and excellent design.
